  • 1 cup panko breadcrumbs

  • 2 cups romaine lettuce, chopped
  • 4 tablespoons Caesar dressing
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 slices of sourdough bread
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow dish, combine panko breadcrumbs and grated Parmesan cheese.
  3. Season the chicken breasts with salt and pepper on both sides.
  4. Coat each chicken breast in the breadcrumb mixture until fully covered.
  5. Heat olive oil in a skillet over medium-high heat and brown each side of the chicken for about three minutes.
  6. Transfer chicken to a baking sheet and bake for 15-20 minutes or until internal temperature reaches 165°F (74°C).
  7. Butter one side of each slice of sourdough bread and grill in another skillet until golden brown.
  8. Once cooked, let the chicken rest briefly before slicing into thin strips.
  9. Toss chopped romaine lettuce with Caesar dressing in a mixing bowl.
  10. Assemble by layering dressed lettuce, sliced chicken, and optional cherry tomatoes between two slices of grilled sourdough.
