  • 2 lbs potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper, to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a round baking dish.
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, chopped thyme, salt, and pepper.
  3. Layer half of the sliced potatoes in the baking dish and drizzle with half of the balsamic mixture.
  4. Add the remaining potato slices on top and drizzle with the remaining balsamic mixture.
  5. Cover with foil and bake for 45 minutes to steam the potatoes until tender.
  6. Remove foil, sprinkle with grated Parmesan if desired, and bake uncovered for an additional 15-20 minutes until crispy.
  7. Allow to cool slightly before slicing and serving.
