  • 1/4 cup flour
  • 2 tablespoons tomato paste (optional)
  • 68 cups chicken broth (start with 6 cups)
  • 6 oz small pasta (like shells)
  • 1 cup heavy whipping cream
  • 1/21 cup grated Parmesan cheese
  • 2 1/23 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced chicken, season with Italian seasoning, salt, and pepper. Cook until browned (4-5 minutes).
  2. Add onions, carrots, celery, sundried tomatoes, and garlic; sauté until translucent (3-4 minutes).

  4. Gradually whisk in chicken broth, ensuring no lumps form.
  5. Bring to a boil; add pasta and remaining Italian seasoning. Cover and simmer for 20 minutes.
  6. Stir in heavy cream, spinach, and Parmesan cheese; simmer for an additional 5 minutes.
