  • 1/2 cup fresh squeezed orange juice
  • 1/4 cup fresh squeezed lemon juice
  • 1 Tablespoon Califia unsweetened almond milk
  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 23 cups fresh mixed greens
  • 3/4 cup olive oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon minced shallots
  • 1/4 cup loosely packed fresh parsley
  • pinch of salt
  • 1/2 cup pepitas
  • 1 cup fresh blueberries
  • 1 Tablespoon olive oil

Instructions

  1. For the dressing, blend orange juice, lemon juice, almond milk, parsley, olive oil, rice vinegar, shallots, and salt in a mason jar until smooth.
  2. Preheat the grill to medium-high heat and brush pineapple slices with olive oil. Grill for about 2 minutes per side until charred.
  3. Add corn to the grill and cook for about 5 minutes per side until slightly charred.
  4. Assemble by layering mixed greens in bowls and topping with grilled pineapple slices, sliced avocado, corn kernels, pepitas, and blueberries.
  5. Drizzle with creamy citrus dressing before serving.
