  • 1 head cauliflower, chopped into florets
  • 1 bulb garlic, roasted
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 2 cups sharp cheddar cheese, shredded
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Cut off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. In a large pot, heat olive oil over medium heat. Sauté diced onion for about 5 minutes until translucent.
  3. Add cauliflower florets and squeezed roasted garlic to the pot. Pour in vegetable broth and bring to a boil.
  4. Cook until cauliflower is tender (15-20 minutes), then blend until smooth using an immersion blender.
  5. Stir in shredded cheddar cheese and milk or cream over low heat until melted. Season with salt and pepper.
  6. Serve hot, garnished with chives or parsley if desired.
