  • 11/2 lbs Little Potatoes Company White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley (for garnish)

Instructions

  1. Poke each potato with a fork to allow steam to escape. Microwave for 8 minutes total, flipping halfway through.
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Transfer microwaved potatoes to a bowl, drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
  4. Smash each potato until about 3/8" thick and place them on the baking sheet.
  5. Bake for 12 minutes total, flipping halfway through, until golden brown.
  6. Serve warm topped with fresh parsley and your choice of dip.
