  • 13/4 cups sweet corn (fresh or frozen)
  • 13/4 cups cherry tomatoes (quartered)
  • 1 cup diced bell peppers (1/2 red and 1/2 green)
  • 1/3 cup diced red onion
  • 2 tablespoons finely diced jalapeño
  • 1/3 cup finely chopped cilantro
  • 1 (15.25-ounce) can black beans (drained and rinsed)
  • 1 (15.5-ounce) can black-eyed peas (drained and rinsed)
  • 2 tablespoons apple cider vinegar
  • Juice of 1 large lime
  • 1 teaspoon chili powder
  • 1 teaspoon sugar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Dijon-style mustard
  • 1/4 teaspoon garlic powder
  • 1/3 cup olive oil
  • 2 ripe avocados (optional)
  • Salt and pepper to taste
  • Tortilla chips (for serving)

Instructions

  1. Dice all vegetables into similar sizes for even flavor distribution. If using fresh corn, sauté it in olive oil over medium-high heat for about 5–8 minutes until cooked through. Allow it to cool before adding.
  2. In a large bowl, combine the prepared vegetables with drained black beans and black-eyed peas.
  3. For the dressing, zest and juice the lime into a jar along with remaining dressing ingredients. Shake well until combined.
  4. Just before serving, gently fold in diced avocados (if using) and drizzle with dressing.
