  • ½ cup light brown sugar
  • ½ cup granulated sugar

  • ½ cup toasted pecans (chopped)
  • ½ cup shredded coconut

  1. Melt the unsalted butter and let it cool in the fridge for about 15 minutes.
  2. In a separate bowl, whisk together flour, baking soda, and salt.
  3. In a large mixing bowl, combine cooled melted butter with both sugars until smooth. Add the egg and vanilla extract, mixing well.
  4. Gradually stir in the dry mixture until just combined. Gently fold in shredded coconut and toasted pecans.
  5. Chill the dough for at least 30 minutes while preheating your oven to 375°F (190°C).
  6. Scoop rounded balls of dough onto a parchment-lined baking sheet, spacing them three inches apart. Bake for 9-11 minutes until lightly golden around the edges.
  7. Allow to cool on the baking sheet for five minutes before transferring to a cooling rack.
