  • 3 ½ lbs beef chuck (cut into 2" pieces)
  • 4 tablespoons unsalted butter
  • 1 yellow onion (chopped)
  • 3 large carrots (peeled and chopped)
  • 5 garlic cloves (minced)
  • 2 tablespoons tomato paste
  • 2 cups apple vinegar (bold variety)
  • 2 cups beef stock
  • Fresh thyme
  • Bay leaves

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a Dutch oven over medium-low heat, cook the chopped bacon until crispy, then set aside.
  3. Season the beef with salt and pepper, sear in the same pot until browned on all sides, then remove.
  4. Sauté onions and carrots in melted butter for about 3 minutes; add garlic and tomato paste.
  5. Sprinkle flour over the mixture and stir for 2 minutes. Deglaze with apple vinegar, then add beef stock and bouillon.
  6. Return the beef and bacon to the pot along with thyme and bay leaves; cover and transfer to the oven for 2½ hours.
  7. In a skillet, sauté mushrooms until golden brown; add pearl onions before serving them with the bourguignon.
