  • 2¼ cups vanilla wafer crumbs
  • ¼ cup brown sugar
  • ½ cup unsalted butter (melted)
  • 1 cup mascarpone cheese
  • ½ cup confectioner’s sugar
  • 1½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 23 tsp lemon zest
  • 1 cup whole milk ricotta cheese
  • ¾ cup heavy whipping cream
  • 1â…“ cups mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine vanilla wafer crumbs, brown sugar, and melted butter. Press firmly into the bottom of a pie dish.
  2. Bake the crust for about 10 minutes until lightly golden. Allow it to cool completely.
  3. In another bowl, beat together mascarpone cheese, confectioner’s sugar, vanilla extract, ground cinnamon, lemon zest, and ricotta cheese until smooth.
  4. In a separate bowl, whip the heavy cream until stiff peaks form and gently fold it into the cheese mixture.
  5. Stir in one cup of mini chocolate chips and spread the filling over the cooled crust.
  6. Cover with plastic wrap and refrigerate for at least 8 hours or overnight before serving.
