  • 3 tablespoons olive oil
  • ½ cup dry white grape juice
  • 4 cloves garlic (thinly sliced)
  • 2 tablespoons capers (drained)
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • Fresh parsley (for garnish)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ cup flour
  • ¼ cup Parmesan cheese (finely grated)
  • 1 teaspoon garlic powder
  • 1 tablespoon salted butter
  • 2 tablespoons cold salted butter

Instructions

  1. Season the chicken breasts with salt and pepper, then coat them with flour mixed with Parmesan cheese and garlic powder.
  2. In a large skillet, heat olive oil and butter over medium heat. Sauté the chicken for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add sliced garlic and sauté until fragrant. Deglaze with white grape juice, scraping up any browned bits from the bottom of the pan.
  4. Stir in capers, chicken broth, and lemon juice; allow to simmer for a few minutes.
  5. Return the chicken to the skillet, letting it soak in the flavors for another 2-3 minutes. Finish by swirling in cold butter until melted. Garnish with fresh parsley before serving.
