  • 200 grams cheese (cheddar or similar)
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh parsley
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 4 garlic cloves
  • 3 tablespoons extra virgin olive oil
  • 2¼ cups plain flour
  • 1 teaspoon baking soda
  • ¾ teaspoon cooking salt or kosher salt
  • ½ cup plain yogurt
  • ¾ cup full-fat milk
  • 2 large eggs
  • 50 grams unsalted butter, melted
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 180°C (350°F). Grease and line a loaf pan.
  2. In a bowl, mix rosemary, parsley, oregano, thyme, garlic, olive oil, and salt into an herb mixture.
  3. In another bowl, whisk flour, baking soda, and salt together.
  4. In a separate bowl, combine yogurt, milk, eggs, melted butter, and garlic until smooth.
  5. Mix wet ingredients into dry until just combined.
  6. Layer one-third of the batter in the pan followed by some herb mixture and cheese slices. Repeat twice more.
  7. Bake for about 50 minutes until golden brown; check doneness with a skewer.
  8. Cool for five minutes in the pan before transferring to a wire rack.
