  • ⅓ cup olive oil
  • ¼ cup apple cider vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic (minced)
  • Fresh herbs (thyme and rosemary)
  • Kosher salt
  • Ground pepper

Instructions

  1. Trim the skirt steak of excess fat and season generously with kosher salt.
  2. In a bowl, whisk together olive oil, apple cider vinegar, soy sauce, Dijon mustard, minced garlic, thyme, rosemary, and ground pepper.
  3. Place the seasoned steak in a resealable bag and pour the marinade over it. Seal tightly and refrigerate for at least 2 hours (up to 12 hours for deeper flavor).
  4. Preheat your grill to high heat. Remove the steak from the fridge 30 minutes before grilling.
  5. Pat dry the steak and season with additional ground pepper. Grill each side for about 3-4 minutes until charred and cooked to your desired doneness (aim for 125-130°F internal temperature).
  6. Let the steak rest for 10 minutes before slicing against the grain into half-inch pieces.
