  • 9oz / 250g Digestive Biscuits or Graham Crackers
  • 1 Stick / 8 Tbsp / 115g Butter
  • 2 Cups / 500ml Heavy Whipping Cream
  • 9oz / 250g Cream Cheese
  • 1/2 Cup / 60g Powdered Sugar
  • 12 tsp Peppermint Essence
  • 5 Candy Canes, crushed

Instructions

  1. Crush the digestive biscuits or graham crackers using a food processor or rolling pin until fine.
  2. Melt the butter and combine it with the crushed biscuits until it resembles wet sand.
  3. Press the mixture firmly into a lined springform pan to create the crust, then chill while preparing the filling.
  4. In a mixing bowl, whip heavy cream until soft peaks form.
  5. In another bowl, beat cream cheese with powdered sugar until smooth and fluffy.
  6. Gently fold whipped cream, peppermint essence, and crushed candy canes into the cream cheese mixture.
  7. Spoon this filling into the chilled crust and smooth out the top.
  8. Refrigerate for at least 4-6 hours (or overnight) to set.
  9. Once set, carefully remove from pan, slice, and serve topped with whipped cream and extra crushed candy canes.
