  • 2 ¼ cups water
  • ¼ cup rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 1 ½ cups imitation crab sticks or cooked fish fillet
  • 1 large avocado, sliced
  • 1 small cucumber, julienned
  • 6 sheets roasted seaweed (nori)
  • 1 cup crispy fried onions or tempura flakes
  • 2 tablespoons toasted sesame seeds (optional)
  • 3 tablespoons mayonnaise
  • 1 tablespoon sriracha or chili sauce (adjust to taste)
  • 1 tablespoon unseasoned yogurt-based sauce for a lighter alternative
  • Soy sauce for dipping

Instructions

  1. Rinse 2 cups of short-grain rice until the water runs clear. Cook with 2 ¼ cups water until fluffy.
  2. In a small saucepan, combine ¼ cup rice vinegar, 1 tablespoon sugar, and ½ teaspoon salt; heat until dissolved. Mix with cooked rice while warm.
  3. Prepare fillings by shredding imitation crab and slicing avocado and cucumber.
  4. On a bamboo mat lined with plastic wrap, place nori shiny side down. Spread rice over two-thirds of the nori and flip it so the rice is facing down.
  5. Add fillings along the lower edge; roll tightly using the mat and seal with water.
  6. Top with mayonnaise or sriracha mayo and crispy onions; roll again lightly to secure toppings.
  7. Slice into pieces with a wet knife for clean edges, serve with soy sauce.
