  • 1 head of garlic
  • 30 grams olive oil
  • 50 grams butter
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 200 grams mozzarella cheese
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar
  • Chopped fresh parsley

Instructions

  1. Roast the garlic by drizzling it with olive oil and wrapping it in foil. Bake at 160°C (320°F) for about two hours.
  2. Mix softened butter with roasted garlic and chopped parsley to create garlic butter.
  3. Combine warm milk, yeast, and honey in a bowl; let sit for 10 minutes.
  4. In a large bowl, mix all-purpose flour, bread flour, sugar, softened butter, salt, egg yolks, and the yeast mixture until combined.
  5. Knead dough for 15-20 minutes until smooth. Allow it to proof in a warm spot for about 1.5 hours.
  6. Roll out the dough, spread garlic butter evenly, and sprinkle mozzarella cheese over it.
  7. Cut into portions and allow them to proof again for 30 minutes.
  8. Preheat oven to 175°C (350°F). Brush rolls with an egg wash and bake for 20–25 minutes until golden brown.
