  • 3/4 cup unsalted butter
  • 3 large eggs (for the filling)
  • 15-ounce can pumpkin puree
  • 1/4 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground allspice
  • 3/4 cup maple syrup
  • 1 cup heavy cream
  • 3 tablespoons granulated sugar (for brûlée topping)

Instructions

  1. Preheat the oven to 375°F.
  2. Combine flour, sugar, and salt in a food processor. Add cold butter and pulse until crumbly.
  3. Mix egg, vinegar, and ice water; add to flour mixture until dough forms.
  4. Chill dough for 30 minutes, then roll out into a pie plate.
  5. Blind bake for 15 minutes. Brush with egg white and reduce temperature to 350°F.
  6. Whisk together eggs, pumpkin puree, sour cream, vanilla, spices; combine with heated maple syrup and cream.
  7. Pour filling into crust and bake for 55–60 minutes until set.
