  • 56 medium sweet potatoes (peeled & sliced into thin medallions)
  • ¼ cup unsalted butter
  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and slice sweet potatoes into thin medallions; arrange in a baking dish.
  3. In a saucepan, melt butter with brown sugar, water, spices, and salt over medium heat.
  4. Brush three-quarters of the sauce over the sweet potatoes. Cover with foil and bake for 45-50 minutes until tender.
  5. Remove the foil and drizzle remaining sauce over top; sprinkle with pecans and mini vegan marshmallows. Broil for 1-2 minutes until toasted.
  6. Let cool for 10-15 minutes before serving.
