  • 1 pound beef tenderloin (450 grams)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • ½ onion (minced)
  • 2 cups button mushrooms (finely chopped)
  • 1 tablespoon soy sauce
  • ½ cup pitted black olives
  • 1 pound puff pastry (450 grams)
  • Mustard (to taste)
  • 1 small egg (beaten)

Instructions

  1. Cut beef into 1-inch pieces and season with salt and pepper.
  2. Heat olive oil in a skillet; brown half the beef on all sides for about 1-2 minutes each. Set aside.
  3. Preheat oven to 400°F (200°C).
  4. In the same skillet, sauté onion and mushrooms until soft, about 10 minutes.
  5. Add soy sauce and olives; blend in a food processor until smooth.
  6. Unroll puff pastry, cut into squares, spread mustard, add mushroom mixture and beef, then fold corners over filling.
  7. Brush with beaten egg and bake for 10-15 minutes until golden brown.
