  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 head of garlic
  • 1 lemon
  • 1/4 cup fresh basil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1 tbsp honey

Instructions

  1. Preheat your oven to 200C | 390F.
  2. Wash and cube the baking potatoes; par-boil for 6-8 minutes, then drain and steam dry.
  3. Toss par-boiled potatoes with olive oil, thyme, oregano, salt, pepper, and chili flakes in a baking dish.
  4. Prepare garlic by drizzling with olive oil; wrap in foil and place in the baking dish.
  5. Roast potatoes and garlic for 30-40 minutes until golden brown.
  6. Add feta cheese in the center of the tray; squeeze half of the lemon over everything.
  7. Return to oven for an additional 15 minutes until feta softens.
  8. Squeeze roasted garlic into a bowl, mash it, then mix back into potatoes along with remaining lemon juice and fresh basil.
  9. Drizzle honey on top and serve warm.
