  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups chopped fresh spinach
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook chopped turkey bacon until crispy; remove and set aside.
  2. Sauté diced onion in turkey bacon grease until translucent; add minced garlic and cook for another minute.
  3. Stir in flour to create a roux, then whisk in chicken broth gradually until smooth. Bring to a simmer.
  4. Add heavy cream, thyme, and smoked paprika; stir well.
  5. Cook gnocchi in the simmering soup for about 3-5 minutes or until they float to the top.
  6. Reduce heat to low and mix in cheddar cheese until melted and smooth.
  7. Season with salt and pepper; stir in sautéed spinach.
  8. Return crispy turkey bacon to the soup (reserve some for garnish) and simmer for an additional few minutes before serving.
