  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef cubes until browned on all sides; remove from pot.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Stir in tomato paste and cook for one minute.
  4. Deglaze the pot with a splash of beef broth, scraping up any browned bits.
  5. Return beef to the pot and add remaining broth along with carrots, potatoes, parsnips, and celery.
  6. Season with thyme, rosemary, bay leaf, salt, and pepper.
  7. Bring to a boil then reduce heat to low; cover and simmer for about two hours until beef is tender.
  8. Adjust seasoning as needed before serving hot with fresh parsley garnish.
