  • 2 medium sweet potatoes, peeled and diced
  • 1 granny smith apple, cored and diced
  • 1 cup dried cranberries
  • 1 cup uncooked quinoa
  • 2 cups apple cider or juice
  • 1/2 cup roasted pecans
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon minced shallot
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil and spread on a baking sheet. Roast for about 15 minutes or until lightly brown and soft.
  2. Rinse quinoa under cold water. In a saucepan, combine rinsed quinoa with apple cider/juice and bring to a boil. Reduce heat to simmer for about 15 minutes; add cranberries near the end.
  3. In a large bowl, combine roasted sweet potatoes, cooked quinoa with cranberries, diced apple, and minced red onion.
  4. Whisk together vinaigrette ingredients in a separate bowl. Drizzle over the salad mixture and toss gently.
  5. Top with roasted pecans just before serving.
