  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/3 cup apple cider
  • 1/3 cup fresh apple, peeled and grated

Instructions

  1. Preheat your oven to 325°F (163°C) and line a 9 x 5 loaf pan with parchment paper.
  2. In a stand mixer, cream together unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing thoroughly after each addition, then incorporate vanilla extract.
  4. In a separate bowl, whisk together all-purpose flour, baking powder, spices, and salt.
  5. Gradually add dry ingredients to the butter mixture while alternating with apple cider; start and end with dry ingredients.
  6. Gently fold in grated apples until just combined.
  7. Pour batter into the prepared loaf pan and bake for about 55 to 60 minutes or until a toothpick comes out clean.
  8. Allow to cool in the pan for 15 minutes before lifting out using parchment paper; cool completely on a wire rack.
