  • 1½ cups all-purpose flour

  • ¾ teaspoon cinnamon
  • ¾ teaspoon nutmeg
  • ½ teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 tablespoons sugar (for rolling)
  • ½ teaspoon allspice

Instructions

  1. In a large bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy. Add in the egg and apple cider; mix until well combined.
  2. In another bowl, whisk together flour, cream of tartar, baking soda, salt, nutmeg, allspice, and cinnamon. Gradually fold this mixture into the wet ingredients until just combined.
  3. Chill the dough covered in plastic wrap for at least 30 minutes.
  4. Preheat your oven and prepare two baking sheets lined with parchment paper. Scoop tablespoons of dough and roll them into balls; then roll in a mixture of sugar and cinnamon before placing on the sheets.
  5. Bake until lightly golden around the edges but soft in the center. Let cool before transferring to wire racks.
