  • 1/2 cup pitted Kalamata olives, halved
  • 1/4 cup pitted green olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh dill
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Wash the potatoes thoroughly and cut larger ones into halves or quarters.
  2. Boil the potatoes in salted water for about 15-20 minutes until tender.
  3. Drain and allow them to cool slightly.
  4. In a small bowl, whisk together olive oil, lemon juice, apple cider vinegar, Dijon mustard, minced garlic, salt, and pepper.
